Instructions
Preheat your air fryer to 200°c (400F).
Rinse, scrub and pat dry the baking potatoes.
2 Baking Potatoes
Spray 2 or 3 sprays of fry light on the outside of each of the potatoes and rub in with your hands to coat each potato evenly. Alternatively use olive oil.

Place the potatoes in your air fryer basket and sprinkle with sea salt.

Cook for 40-45 minutes for medium-size baking potatoes, or 45-50 minutes for large baking potatoes (or until you can easily pierce into the centre of the potato with a sharp knife). Rotate with tongs halfway through cooking if you can.

Top Tips:
It's important to use baking potatoes for this recipe to ensure the fluffiest middle.
Don't overcrowd your air fryer basket. Each potato needs to have space around it to ensure crispy skin. I can fit 3 medium size potatoes in my 5.7 litre air fryer (or 2 large ones), but if you have a smaller air fryer you may only be able to cook 2 medium size baking potatoes.
Rotating the potatoes halfway through cooking means the skin crisps up evenly on all sides. Use tongs as they will be very hot!
It's best to allow the potatoes to cool down for 5 minutes in the air fryer basket before serving them.
Variations:
Swap the fry light spray for olive oil or avocado oil.
Sprinkle the skins with garlic powder, smoked paprika or even chilli powder before air frying for more flavour.
Make mini air fryer baked potatoes for appetisers or finger buffets. Use baby potatoes instead of baking potatoes and cut the cooking time in half.
