Place the strawberries, icing sugar, and lemon juice in a pan and simmer on a medium heat for 10 minutes, stirring often.
Blend to a smooth sauce using a stick blender or food processor.
Place a metal sieve over a bowl and press the strawberry coulis through the sieve.
Spoon or pour the coulis into jars or an air-tight container and store in the fridge.
Notes
Top Tips:
Taste the strawberries before pureeing them, and adjust the sweetness if necessary. If you want the coulis to be sweeter stir through a little more icing sugar and whisk to dissolve.
If using frozen berries there is no need to defrost them first.
Variations:
Try using different fruits such as raspberry, blackberries or blackcurrants.
Use orange or lime juice instead of lemon
Add the zest of the lemon (or other citrus fruit) to the coulis for a sharper flavour.
Make a double batch and freeze half.
